Sustenance and Desire

• _Sustenance and Desire_ (Godine, $24.95).

The subtitle, ''A Food Lover's Anthology of Sensuality and Humor,''
is off the mark -- not much ''sensuality and humor'' in a serious
piece on cannibalism.

However, this anthology, beautifully illustrated by the artist
Bascove, delivers what is promised. In the ''Desire'' section the
reader, having learned the etymology of the word vanilla, will never
think of that flavor as the polite opposite of randy chocolate.

Here is Proust's famous passage on madeleines, as well as a gorgeous
Nabokov piece on his mother picking mushrooms.

Best are humorous pieces by the likes of Roy Blount Jr. and Calvin
Trilling. A poem by Mary Stewart Hammon on the post-lovemaking habits
of Southern women will drive a man into the arms of a good old girl,
even if it will mean ``cancer, cardiac arrest, and a stroke.''
