A friend informed me that omble chevalier (loach?) is a different fish and shouldn't be confused with ombre (grayling):

The real fish is OMBLE CHEVALIER, but another fish is called ombre, for its colour as you mentioned, but not to be confused with the former.

Is Ada's "Ombre chevalier" a misprint? Or is Mlle Lariviere (as I suspect) confusing one fish with another?
